Very helpful
I brought this book to use in my Processing of Fruits and Vegetables course and it has been most helpful. It supplemented the notes I had already taken in class and it gave me a better idea of the processes involved in the postharvest care and processing of fruits and vegetables, as well as why there is a need for it and its importance in the food industry. So yes this is a great book.
